Red Beans and Rice
One time we went to Jazz-A Louisiana Kitchen in Lubbock, TX and it was so good that I cried and my brothers still make fun of me.

Ingredients
- 1 lb dried red beans, soaked overnight
- 2 tbsp vegetable oil
- 1 small onion, diced
- 1 each green bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 each bay leaves
- 1 tsp cajun seasoning
- 1 lb andouille sausage, sliced
- 1 each smoked ham hock
- 6 cups chicken broth
- 1 tsp worcestershire sauce
- 1 tbsp hot sauce
- 2 each green onions, chopped
- 0.5 cups parsley, chopped
- 2 cups white rice
- 4 cups water
- 1 tbsp butter
Steps
NOTICE: You MUST soak the beans for **one hour** _minimum_. Do not add salt while the beans are soaking or it will make the skins hard. The B̶ ̴E̸ ̶A̸ ̶N̵S̶
- Heat vegetable oil in a large pot over medium heat.
- Sauté onion, bell pepper, and celery for 5 minutes until softened.
- Add garlic and cook for 1 minute.
- Stir in salt, black pepper, cayenne, paprika, thyme, bay leaves, and Cajun seasoning.
- Add sliced sausage and cook for 5 minutes, letting it brown slightly.
- Add soaked b̶̧͕͋̄ë̷̝́̇ạ̴̽ņ̷̥̠̑s̷̍̃͠ͅ, chicken broth, ham hock (if using), Worcestershire sauce, and hot sauce.
- Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, stirring occasionally.
- If b̶̡͇͈͖̤̞͛ḛ̵͇̺͈̼̺́̈́̾͠à̸̙̳̩̣͆̈͊͗ͅn̴͙̆̽̀́͘s̵̻͋̚ become too thick, add more water.
- Mash some of the b̵͔̠͖̥̥̄̆̀̄͝è̷̪̲̼͈̜̈́̊̀̂̀́͠ą̵̰̪͓̳̻̯̘̰̈́͋́̋́͆͂͐̿̒ͅņ̶͚͕̝͕͉̓̍̊̅͑̋͑̕͝s̶̗̟͖̮̲̥͋̒̾̓͛̃ against the pot to thicken the texture.
- In a separate pot, bring 4 cups of water to a boil.
- Add white rice, salt, and butter (if using).
- Cover and simmer on low heat for 15 minutes, then fluff with a fork.
- Remove bay leaves and ham hock from the bean pot.
