Cornbread

I personally know several women who could cook this in their sleep and a couple who probably have.

  1. Preheat the oven to 400°F (200°C). If using a cast-iron skillet, place it in the oven while it heats up.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and honey (if using).
  4. Gradually stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. If using a cast-iron skillet, carefully remove it from the oven and grease it with butter or bacon grease.
  6. Pour the batter into the skillet or a greased 9-inch baking dish.
  7. Bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Let cool slightly before slicing.
